This Banana bread is protein PACKED with 35 grams of protein. This recipe makes a mini loaf that you can enjoy as a balanced breakfast (yes, the whole thing), or enjoy a slice with a cup of coffee or tea in the afternoon.


1 scoop NM vanilla
2 tbsp coconut flour
1 very ripe banana, mashed
1 whole egg
3 tbsp milk of choice
1 tsp cinnamon
dash of nutmeg
heaping 1/2 tsp baking powder
1/2 tsp vanilla extract

Combine all ingredients and pour into a mini loaf pan. Bake at 350 for about 40 min.
Triple the recipe if you want to make a full size loaf. Can also bake into mini muffins, adjust baking time to about 30-35 minutes.
