If you have one indulgent day, and eat healthy the rest of the week, you will still see progress. The problem is you have enough leftovers to feed a small country! Here are a few healthy ways to use those Thanksgiving Leftovers!
Slow Cooker Leftover Turkey Stew (makes 6 servings)
Ingredients:
- 1 stalk celery, diced
- ½ cup diced onion
- 2 cloves garlic, minced
- 1 cup sweet potato, peeled and cut into 1 inch cubes
- 2 carrots, peeled and sliced
- ½ tsp pepper
- 1/3 tsp cayenne
- ½ tsp crushed red pepper flakes
- 1 cup frozen peas
- 2 cups low sodium chicken broth
- salt to taste
- 1-2 lbs leftover turkey cut into chunks or shredded
Directions:
- Put all ingredients except turkey into slow cooker. Cover and cook on low for 8 hours. Add leftover turkey for the last 30 min of cooking time,
Cranberry-Apple Turkey Sandwich
Ingredients:
- Whole wheat English muffin or sandwich thin (toasted if desired)
- 1 slice cheddar cheese
- A few slices of leftover turkey
- Thinly sliced Granny smith apples
- 1 tbsp leftover cranberry sauce
Directions:
- Toast bread if desired and spread on one tbsp of cranberry sauce
- Then assemble rest of sandwich ingredients
Leftover Green Bean Salad (serves 6)
Ingredients:
- 2 cups cooked brown rice or quinoa
- 2 cups leftover cooked green beans, cut into 1-inch pieces
- ¾ cup crumbled reduced fat feta cheese
- 1 Tomato Sliced
- ¼ cup chopped fresh parsley
- ¼ cup chopped fresh mint
- ¼ cup thinly sliced red onion
- ½ tsp grated lemon rind
- ¼ cup fresh lemon juice
- 2 ½ tbsp extra virgin olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 4 kalamata olives, pitted and finely chopped
Directions:
- Combine all ingredients together and toss gently. Serve at room temp.
Leftover Turkey Salad Wraps
Ingredients:
- 1 whole wheat tortilla (around 100 cal)
- 4 oz leftover turkey (cut into chunks or shredded)
- Lettuce
- 1 tbsp olive oil mayo
- diced carrot, celery onion
- Salt and pepper to taste
Directions:
- Combine turkey, mayo, veggies and salt and pepper to taste. Place mixture in wrap roll up and enjoy!
