Brussels sprouts used to be the "cringe" vegetable, not anymore! It all depends how you prepare them. These roasted brussels sprouts are crispy roasted, coated with savory parmesan cheese and garlic. Even if you're not a sprout fan, give these a chance!

You will need:

  • 1 lb brussels sprouts
  • 2 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup grated cheese
  • 1/8 cup whole wheat or gluten free bread crumbs

Directions:

  1. Preheat oven to 400 degrees F.
  2. Cut off ends of sprouts and cut each in half
  3. Place Brussels sprout halves in a mixing bowl. Add oil and seasonings, tossing gently to coat.
  4. Add Parmesan cheese and breadcrumbs to sprouts and gently mix with your hands to evenly coat
  5. Place sprouts on a baking sheet evenly spread out in one layer. Bake for 25 to 30 minutes, until golden brown
